Preheat oven to 350 degrees.
In a medium bowl mash the bananas until there are minimal chunks. The mixture should be sort of like applesauce consistency.
Then add the wet ingredients - milk, egg, melted butter, vanilla, maple syrup to the banana mixture and mix well with a whisk or handheld mixer. Note: Make sure the melted butter is at least slightly cooled so it does not cook the egg when combining.
In a large bowl add the oats and other dry ingredients – salt and baking powder and mix well to combine.
Add the wet ingredients into the large bowl with the oat mixture and mix well with a whisk or handheld mixer to combine.
Then add the chocolate chips and use a spatula to mix and distribute evenly.
Let the mixture sit for 5-10 minutes while you grease your 9x13 baking dish. This is optional but it helps give the bake a more creamy and custardy consistency.
After the mixture has rested, add it to the prepared greased 9x13 pan. Optional: add a few more chocolate chips to the top before baking.
Bake for 30-35 minutes until it has started to slightly brown around the edges and the middle is set.
After baking, let the oatmeal sit for 10-15 minutes before slicing and serving.
