Preheat oven to 350 degrees.
In a medium bowl mash the bananas until there are minimal chunks. The mixture should be sort of like applesauce consistency.
Add the wet ingredients - milk, egg, melted (and slightly cooled) butter, vanilla, maple syrup to the banana mixture and mix well to fully combine. Note: Make sure the melted butter is at least slightly cooled so it does not cook the egg when combining.
In a large bowl add the oats, salt, and baking powder and mix well to combine.
Add the wet ingredients into the large bowl with the oat mixture and mix well to combine.
Then add the chocolate chips and use a spatula to mix and distribute evenly.
Let the mixture sit for 5-10 minutes while you grease your 9x13 baking dish. (The rest time is optional but it helps give the bake a more creamy and custardy consistency.)
Add the mixture to the prepared greased 9x13 pan. Optional: add a few more chocolate chips to the top before baking.
Bake for 30-35 minutes until it has started to slightly brown around the edges and the middle is set.
After baking, let the oatmeal sit for 10-15 minutes before slicing and serving.
