This Comforting Chicken Noodle Soup is a classic meal that I make when we need something simple and comforting. It’s a go to meal when someone in my family is feeling under the weather or when a friend needs a homemade meal that feels like a hug. It’s simple enough for a weekday meal and it makes a large enough portion to last several days or to stock your freezer with leftovers. I often make it on Friday nights so we have a meal ready to go all weekend. No cooking all weekend? Yes, please!

Comforting Homemade Chicken Noodle Soup
Ingredients
- 2-3 chicken breasts
- 4 carrots large
- 4-5 celery stalks
- 1 yellow onion small or medium
- 2 bay leaves
- 1 tsp thyme
- 1 tsp rosemary
- 1/2 tsp ground ginger
- 1/2 lemon (juiced)
- 3 boxes chicken broth
- 10 oz egg noodles half the bag
Instructions
- Add olive oil to Dutch oven and heat on medium-low.
- While that is heating up wash all veggies. Peel carrots and then small dice all veggies.
- Salt and pepper the chicken breast then add to Dutch oven to cook through. After it is cooked through, set aside to rest.
- Put more olive oil in the Dutch oven, if needed, then add veggies to cook until almost tender, about 6-8 minutes depending on desired texture.
- Add spices and cook for 30 seconds to a minute until fragrant.
- Then add the chicken broth.
- Let it come to boil.
- While you are waiting for that to boil, dice the chicken into small pieces and add to the soup.
- Once it is boiling add the noodles and cook for the time on the package, stirring occasionally, so they don't stick
- Add the lemon juice and salt and pepper to taste.
Storage & Reheating the soup:
Chicken noodle soup stores well and makes great leftovers. Let the soup cool completely before transferring it to airtight containers.
- Refrigerator: Store in the fridge for up to 4 days. The noodles will continue to absorb broth, so add extra liquid when reheating if needed. Or leave the noodles out and add them later when reheating the soup.
- Freezer: For best texture, freeze the soup without the noodles and add freshly cooked noodles when reheating. Freeze for up to 3 months.
This makes the recipe perfect for meal prep or stocking the freezer!

- This soup is easy to adjust — add more broth if you prefer it thinner or extra noodles or chicken if your family likes it heartier.
- For a richer flavor, sauté the vegetables in a little butter or olive oil before adding broth.

Chicken – Instead of cooking the chicken yourself, you can buy a rotisserie chicken, then shred it and add to the soup! This makes it even easier!
Noodles – The classic Chicken Noodle Soup Recipes call for egg noodles, but I find that those get pretty soggy quickly. I prefer to use Ditalini Pasta noodles. My kids love the tiny shape and it makes it easier to eat without making a mess.
