As a busy mom, I know mornings can be a struggle. Getting everyone fed, dressed, and out the door should be considered an Olympic sport—am I right? Add in no one wanting to be awake, and it’s a recipe for a rough start to the day.

After too many chaotic mornings, I decided there had to be a better way to feed my kids well so that I could give them a great start to their day. Some of mine are picky eaters, and all of them were tired of eggs every. single. morning. But serving a protein-filled breakfast is a non-negotiable at our house.

That’s how this Chocolate Chip Banana Bread Baked Oatmeal was born—an easy, make-ahead breakfast that fills hungry bellies without the complaints. My kids absolutely love it, and I hope your crew does too.

Equipment

  • 9x13 Baking Dish
  • Large Bowl
  • Medium Bowl
  • Whisk or Handheld Mixer
  • Spatula

Ingredients

  • 2 Ripe Bananas
  • 1 1/2 Cups Milk
  • 1 Egg
  • 2 Teaspoons vanilla
  • 1/3 Cup Maple Syrup
  • 2 Tablespoons Melted Butter cooled
  • 3 Cups Rolled Oats
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 Cup Semi-Sweet Chocolate Chips plus a few more to sprinkle on the top before baking if desired

Instructions

  • Preheat oven to 350 degrees.
  • In a medium bowl mash the bananas until there are minimal chunks. The mixture should be sort of like applesauce consistency.
  • Then add the wet ingredients - milk, egg, melted butter, vanilla, maple syrup to the banana mixture and mix well with a whisk or handheld mixer. Note: Make sure the melted butter is at least slightly cooled so it does not cook the egg when combining.
  • In a large bowl add the oats and other dry ingredients – salt and baking powder and mix well to combine.
  • Add the wet ingredients into the large bowl with the oat mixture and mix well with a whisk or handheld mixer to combine.
  • Then add the chocolate chips and use a spatula to mix and distribute evenly.
  • Let the mixture sit for 5-10 minutes while you grease your 9x13 baking dish. This is optional but it helps give the bake a more creamy and custardy consistency.
  • After the mixture has rested, add it to the prepared greased 9x13 pan. Optional: add a few more chocolate chips to the top before baking.
  • Bake for 30-35 minutes until it has started to slightly brown around the edges and the middle is set.
  • After baking, let the oatmeal sit for 10-15 minutes before slicing and serving.
  • Enjoy!
